Macadamia Roast

Cooking Time: 22 minutes 

1 garlic clove  
1 tablespoon olive oil  
1 and ¼ pound rack of lamb  
Salt and pepper to taste  

Macadamia Crusts : 
3 ounces unsalted macadamia crust
1 tablespoon almond meal  
1 tablespoon fresh rosemary, chopped  
1 whole egg  

Chop up the garlic and toss it with some olive oil to create a garlic oil mix    
Brush the lamb rack with this prepared oil    
Season with pepper and salt    
Preheat your Air Fryer to a temperature of 220 degrees Fahrenheit    
Chop up the macadamia nuts and them to a bowl
Add almond meal and rosemary and mix them well    
Take another bowl and whisk eggs    
Dredge the meat into the egg mix and drain the excess egg    
Coat the lamb rack with the macadamia crust and place them into the Air Fryer basket    Cook for about 30 minutes, making sure to increase the temperature of 390 degrees Fahrenheit after 30 minutes    
Cook for 5 minutes more    
Remove the meat and allow it to cool
Cover with aluminum foil and allow it to sit for 10 minutes
